Bonnie Matthews is one of the first to introduce Freekeh grain, which is an awesome super food, to the US on Dr. Oz. I am obsessed now and am in love with this cook book.
For the first recipe I attempted, I decided to bake a pumpkin recipe, not only because I love everything pumpkin but it is also the beginning of fall! I found on page 28 a recipe for the ‘Pumpkin Muffins with Chocolate Chips.’
This was super easy to make. One thing that caused an issue was finding the Freekeh Flour! I tried Trader Joe’s, Whole Foods, Stop & Shop, Shot Rite, A&P, Acme, local health food markets, and even online! I only found some over priced items online. So I decided to make it myself, and am I happy I did. I took Freekeh whole kernels and put them in a coffee grinder. Once they were grinded up, I sifted them. It worked like magic.
I got all my ingredients together, as seen above, and went to actions. I did change two things within the recipe, the first one is that I substituted Unsweetened Vanilla Almond Milk instead of regular Almond Milk and the second one is that I only put half the amount of Vanilla Extract called for due to the Vanilla Almond Milk.
This recipe tasted great! I did make half the recipe with chocolate chips and half without. Either way, they were so delicious and I got so many compliments on how delicious they were! I can’t wait to make these again! The recipe calls for making 12 cupcakes, I instead felt I could make 24 out of the batter, which made the perfect size cupcake!
I did figure out the nutritious side of the muffins, as seen below. They are not Gluten free though, so my next attempt will be a similar recipe but I will make it Gluten Free.
